fremstillet af naturligt frosne druer, har både flot frugtsyre og stor sødme
men lang, flot, kompleks smag af både abrikoser, pære og lidt ferskner.

Our seventh vintage of Ice Wine from the Williamson vineyard near the winery was ideal in terms of weather conditions:
a long dry autumn reduced mildew pressure and very cold weather early in the winter allowed us to complete picking
the grapes by mid-December. The frozen grapes were then immediately pressed whole-cluster, yielding very little juice
even at high pressure over a 9-hour press cycle. The juice had an initial Brix level of 41 degrees, and was left to settle
36 hours before being racked to a stainless fermenter. A specialty Austrian yeast strain was used to innoculate the
must, and a cold fermentation lasted until mid-February. The 2009 Ice Wine has an intense tropical nose reminiscent
of apricot and Bartlett pear, with aromas of dried fruit and fig. The high level of residual sugar is balanced by the acidity
natural to this Riesling vineyard. While very sweet, the wine remains true to its intense fruit core and has a long, succulent finish.
Enjoy this rare wine chilled as a dessert by itself, or with a traditional cheese plate (blåskimmelost) including fresh fruit
and nuts, or with simple butter cookies.
